- Houjicha powder is made by grinding roasted hojicha leaf tea and is characterized by a nutty-caramel flavor with reduced caffeine content.
Houjicha – roasted Japanese green tea
While other traditional Japanese green teas are only steamed after picking, Houjicha green tea leaves undergo an additional step – roasting at high temperatures. All green teas are steamed to prevent leaf oxidation, preserving their natural green color, aroma, and nutrients.
The roasting process gives the leaves a warm, brown hue and a nutty roasted aroma while reducing bitterness and caffeine content. Houjicha is perfect after meals or in the evening, and in Japan it is loved by children and the elderly.
How to prepare Matcha
Method I – traditionally with a Chasen:
Pour about 100 ml of hot water into a cup and wait until it cools to around 70°C. This warms the cup and makes the tea more enjoyable.
Place 2 g of matcha into a bowl or Chawan. Sifting the matcha helps prevent clumps.
Slowly pour 100 ml of 70°C water over the matcha. Mix with the chasen in an M-shaped motion for about 10 seconds until a frothy layer forms.
Method II – using a shaker:
Place 2 g of matcha and 100 ml of water into a shaker or bottle and mix until no clumps remain. Use water at around 50°C – hot water may explode when shaken.
