Einkorn grain is rich in nutrients and microelements beneficial to health.
It is distinguished by a high content of proteins, fats, and antioxidant substances. Like wheat flour, it contains gluten; however, it is believed that the gluten in einkorn is less harmful than that in common wheat due to the lower toxicity of gliadin. Nevertheless, einkorn flour is not gluten-free according to WHO recommendations.
Einkorn has health-promoting properties associated with the presence of antioxidant compounds that are anti-cancer and beneficial for the heart, such as carotenoids, tocols, polyphenols, and phytosterols. It also contains enzymes that limit the degradation of antioxidants during food production. Additionally, it is characterized by a high content of protein and fats, including monounsaturated fatty acids.
