Cashews are the fruits of the cashew tree, a species of tree in the family Anacardiaceae, which is a close relative of the mango. Cashews originate from tropical areas of South America (mainly Brazil). These kidney-shaped nuts (hence their name) are also cultivated in India, Vietnam, and Central Africa. The Brazilian variety is larger and characterized by a sweet taste, while those from Indian cultivation are smaller, crunchier, but less sweet.
